Potatoes with Mushrooms and Bacon
To prepare a delicious recipe of potatoes with mushrooms and bacon, we start by ensuring that we have all the necessary ingredients at hand. Therefore, we will prepare about 500 grams of potatoes, 300 grams of fresh mushrooms, 150 grams of smoked bacon, a drizzle of olive oil, a small glass of dry white wine, salt, freshly ground pepper, and a bunch of fresh parsley.
We begin by carefully peeling the potatoes and mushrooms. The potatoes should be well washed and then peeled. After peeling them, we cut them into thick slices of about 1-2 cm so they cook evenly. The mushrooms, on the other hand, are cut into thicker slices or halved, depending on their size, to maintain their wonderful texture and flavor.
In a deep pan, we heat a few tablespoons of olive oil. Then, we add the bacon cut into strips or cubes, allowing it to brown slightly until it becomes golden and releases its flavors. This step is essential, as the bacon will add extra flavor to our dish.
After the bacon has browned, we add the potatoes and mushrooms to the pan. We mix well to combine all the ingredients, and then we season with salt to taste. Next, we pour the white wine over the mixture, letting it boil over high heat for a few minutes to evaporate the alcohol. This will add an aromatic note to the dish, intensifying the flavors of the ingredients.
Once the wine has evaporated, we cover the pan with a lid and reduce the heat to medium. We let it cook for about 20-25 minutes. It is important to periodically check if the liquid released by the mushrooms has reduced too much, and if necessary, we can add a little water to ensure that the potatoes cook evenly and do not stick to the pan.
In the last minutes of cooking, we add the finely chopped fresh parsley, which will bring a splash of color and freshness to the dish. Also, if desired, we can add freshly ground pepper for a spicier taste. Once the potatoes are soft and the mushrooms are cooked, we prepare to serve this delicious dish. Enjoy your meal!
