We start by preparing the liver. Cut it into cubes and place it in a pot with water and salt. Blanching the liver helps remove impurities and improves its texture. Let it sit in boiling water for about 5 minutes, then drain it well and let it cool. After it has cooled, pass it through a meat grinder together with a peeled potato. The potato will add a note of moisture and make the pâté fluffier.

In a large bowl, add the mixture obtained from the liver and potato, then incorporate the sour cream, beaten eggs, and semolina, mixing well until you obtain a homogeneous composition. At this point, it is important to ensure that all ingredients are well integrated, so the final texture will be uniform and pleasant.

Separately, take an onion and a few cloves of garlic, chop them finely, and sauté them in butter until they become golden and soft.
