Zucchini sandwich with cheese

 Ingredients: - sliced zucchini either round or lengthwise - a batter like for pancakes made of: flour + milk + baking powder (this is optional, I added it) - breadcrumbs - cheese (I used Brie, but mozzarella or cheese spread can work too..)

I started by preparing the zucchini, slicing it thinly, both lengthwise and into rounds, depending on the inspiration of the moment. After salting the slices, they began to 'sweat', releasing some of their natural moisture. After a few minutes, I wiped the zucchinis with a paper towel to remove the excess water, thus preparing them for the next step of the recipe.

Between two slices of zucchini, I placed a small slice of cheese, choosing a cheese that would melt nicely during frying, such as mozzarella or telemea cheese. To ensure that the sandwiches wouldn't fall apart during frying, I used toothpicks, carefully inserted in the middle of each 'sandwich'. This simple detail proved to be extremely useful during the frying process.

I prepared a batter to cover the stuffed zucchinis. The batter was a combination of flour, water, and a bit of salt, having a consistency similar to that of pancake batter. An interesting alternative would have been to add an egg to the mixture, but I opted for a smaller amount of batter, considering that one egg would have been too much for the portions I was preparing, which were for two people.

After the sandwiches were ready, I dipped them in the prepared batter, making sure they were completely covered. Then, I coated them in breadcrumbs to achieve a crispy and delicious crust. I started frying on low heat to allow the cheese to melt gradually, and then I increased the heat to achieve an even and appetizing browning. I fried one sandwich on one side, then removed the toothpick and carefully flipped it, letting it brown on the other side.

In the end, I took the sandwiches out of the pan and placed them on a paper towel to absorb the excess oil. These stuffed zucchini fritters with cheese are delicious, crispy on the outside and soft on the inside, perfectly suited for a snack or appetizer. They can be served warm, alongside a yogurt or sour cream sauce, turning each bite into a memorable culinary experience.
