Soy Schnitzels
To prepare a delicious soy schnitzel recipe, we will start by making sure we have all the necessary ingredients on hand. These are: textured soy, eggs, milk, salt, cheese (preferably cottage cheese or feta cheese), spices (such as pepper, oregano, and paprika), and flour.
The first step is to prepare the textured soy. In a large pot, bring water to a boil. When the water is boiling, add the textured soy and let it boil for about 10-15 minutes, until it becomes soft and doubles in volume. After boiling, remove the soy from the water and place it in a strainer or on a clean kitchen towel to drain excess water.
While the soy is draining, we can prepare the mixture for the schnitzels. In a large bowl, crack a few eggs and beat them well with a whisk or mixer. Gradually add the milk, continuously mixing to obtain a homogeneous composition. It is important to ensure that the eggs and milk are well integrated, so that the schnitzels have a uniform texture.
Now, add salt to taste, crumbled cheese, and your favorite spices. A combination of freshly ground pepper, dried oregano, and a teaspoon of paprika will add a special flavor to the dish. Mix again until all ingredients are well incorporated. At this point, start adding flour, little by little, mixing with a spatula or wooden spoon to avoid lumps. The mixture should be dense but still easy to handle.
After the soy has drained well, add it to the egg and cheese mixture. Carefully mix everything so that the soy is evenly coated with our delicious mixture. Now, it's time to form the schnitzels. Using a spoon, take portions of the mixture and shape them into round or oval forms, depending on your preference.
In a deep frying pan, heat enough oil to cover the bottom of the pan. When the oil is hot, add the schnitzels, being careful not to overcrowd the pan. Fry them for a few minutes on each side until they become golden and crispy. Once they are ready, remove them onto an absorbent paper towel to eliminate excess oil.
