Potato Dish with Olives
We start by cleaning and washing the potatoes well, choosing the freshest and finest ones to have a tasty dish. Once we finish with the potatoes, we turn our attention to the other vegetables. The peppers, onion, carrot, celery, and tomatoes must also be cleaned and washed carefully. These vegetables not only provide nutritional value but also a special flavor to our dish. We cut the potatoes into suitable cubes, while the other vegetables will be sliced thinly so that they soften faster when we cook them. The tomatoes can be cut into small cubes, but for a finer sauce, we can use a blender to achieve a delicious paste.
After preparing the vegetables, we move to a large pot where we will begin the cooking process. We add the chopped onion and sauté it, leaving it on low heat until it becomes glassy and fragrant, filling the kitchen with an inviting aroma. Once the onion has taken on a pleasant color, we add the rest of the chopped vegetables and let them soften on low heat, stirring occasionally to prevent sticking.
After a few minutes, we add the tomatoes and potato cubes to the pot, covering everything with water so that the vegetables are completely submerged. It is essential to let the vegetables simmer on low heat to release their flavors and combine perfectly. We must not forget to add the olives, which we have rinsed under cold water to remove excess salt. We let everything boil until the vegetables and potatoes are well cooked, and the aroma intensifies.
In the end, we add the tomato juice, season with salt to taste, and let it come to a boil a few times so that all the ingredients blend harmoniously. Before turning off the heat, we sprinkle the finely chopped greens, adding a touch of freshness and color to our dish. We serve it warm, alongside a slice of fresh bread, to savor every bite of this simple yet flavorful dish. This recipe will surely bring joy to the family table!
