Bream on a bed of potatoes
Ingredients: 2 pieces of dorado, 5 medium potatoes, 2 tomatoes, 150 ml white wine, soy sauce, ground ginger, basil, salt, pepper, olive oil
To prepare a culinary delight, we start by cleaning the sea bream. It is essential to remove all scales and the internal organs of the fish, taking care to keep the meat intact. After you finish this step, rinse the fish under a stream of cold water to remove any impurities. Then, dry it with a paper towel and generously season it with salt, pepper, grated ginger, and dried basil. These flavors will infuse into the fish, giving it a wonderful taste.
While the fish is marinating, take a few suitable potatoes and peel them. Slice them into thin rounds so they cook evenly. Also, slice the tomatoes, ensuring they are the same thickness as the potato rounds. Season the vegetables with a little Delikat and pepper to enhance their flavor during baking.
In a baking dish, pour a splash of olive oil, which will help brown and caramelize the vegetables. Arrange the potato rounds evenly on the bottom of the dish, making sure they slightly overlap. Then, place the sea bream on top of the potatoes, ensuring the fish is well-centered. Lay the tomato slices over the sea bream, which will add a touch of freshness and delicious flavor.
To intensify the flavors, add a little soy sauce on top of the fish and vegetables. This ingredient will provide an umami note to the dish. Cover the dish with aluminum foil, ensuring it is well sealed to retain moisture inside. Preheat the oven to 180 degrees Celsius and place the dish in the oven for 15 minutes.
After this time, carefully remove the dish and add a little white wine over the sea bream. The wine will contribute to a more complex flavor and help tenderize the meat. Place the dish back in the oven, still covered with foil, and let it bake for another 15 minutes on medium heat. In the last 5 minutes, remove the aluminum foil to allow the fish to brown slightly and achieve a delicious crust.
