Fish meatballs
Ingredients: 2 trout, 2 carrots, 2-3 potatoes, celery leaves, bay leaf, a little white wine, peppercorns, egg, and breadcrumbs
To prepare a delicious fish meatball recipe, we start by gathering the necessary ingredients. You will need potatoes, carrots, celery leaves, bay leaves, peppercorns, salt, fish (preferably fillets of white fish, such as cod or sea bream), eggs, breadcrumbs, and of course, a bit of fresh parsley. These simple yet flavorful ingredients will help you create a dish that is both tasty and easy to make.
Start by peeling the potatoes and carrots, cutting them into large pieces to cook evenly. Then, in a large pot, add water and white wine, which will enhance the flavor. Add the cut potatoes and carrots, along with the celery leaves, bay leaves, peppercorns, and a pinch of salt. Let it boil over medium heat until the vegetables become soft, about 15-20 minutes. When they are almost cooked, add the fish and let it boil for 5-7 minutes until well done.
After the fish is cooked, drain everything through a sieve, keeping the liquid for other uses, such as a delicious soup. Carefully remove the bones from the fish and, in a food processor or with a hand mixer, grind together the potatoes, carrot, and fish. Make sure the result is homogeneous, then add salt to taste and a bit of finely chopped parsley to enhance the flavors.
With the obtained mixture, form meatballs of suitable size. You can roll them in beaten egg and then in breadcrumbs to get a crispy crust. Preheat the oven to 180 degrees Celsius. Place the meatballs on a baking tray lined with parchment paper and bake for about 20-25 minutes or until they become golden and crispy.
