Ingredients: 150 g cleaned fish roe, salt, approx. 400 ml oil, 1 small onion, 250 ml water, semolina, juice from one lemon
To prepare a delicious fish roe recipe, we will start by boiling approximately 300 ml of water with a pinch of salt. This step is essential to achieve a semolina that has the desired consistency, so when the water reaches boiling point, we gradually add the semolina, stirring continuously. It is important to add enough semolina grains to obtain a firmer mixture that does not flow when cooled. The mixture should be dense enough to stay on a spoon without dripping.
Meanwhile, the fish roe we will use must be cleaned of membranes and kept in the refrigerator, ideally from one day to the next. This step is crucial because the refrigerator helps maintain the freshness and flavors of the roe. Once the roe is prepared, we transfer it to a large bowl. Here, we add a teaspoon of salt, which will help enhance the flavor.
Using a mixer, we begin to whisk the roe at high speed. While the mixer is running, we gradually add the oil, little by little, to achieve a thick and creamy mayonnaise. This is the stage where it is crucial to be patient, as the oil must be incorporated gradually to avoid separation. Once we reach the desired consistency, we will carefully add the lemon juice, which will add a note of acidity and balance the taste of the roe.
After we have well integrated the lemon juice, we finely grate the onion and add it to the mixture, contributing to an extra flavor. At this point, it is time to introduce the cooled semolina as well. This will give a more pleasant texture to the dish and help bind the ingredients together. It is recommended to taste the mixture and adjust the amount of salt and lemon juice according to our personal preferences.
Once we have finished preparing the roe, we transfer the composition to a container and let it cool for 2-3 hours. This resting time is essential for the roe to firm up and reveal its flavors. Thus, in the end, we will enjoy a savory appetizer, perfect to be served on a slice of toasted bread or alongside fresh vegetables.
