Carrot Cream with Beans (Vegan)
Ingredients: 2 boiled carrots, a small bowl of boiled beans (a large cup), salt to taste, olive oil (a small glass of tuica), a small clove of garlic, pepper
To prepare a delicious bean paste, we need a few simple yet flavorful ingredients. We start by washing the beans well, ensuring they are clean and free of impurities. If you are using dried beans, it is best to soak them in cold water for a few hours or ideally overnight. This will help reduce the cooking time and make the beans easier to digest. If you are using canned beans, make sure to drain them well and rinse them under cold running water.
In a blender, add the prepared beans, one medium carrot peeled and diced, as well as a few cloves of garlic, depending on your preferences. The garlic will give an intense and aromatic flavor to this paste. Blend the ingredients on medium speed until you achieve a smooth and homogeneous paste with a pleasant consistency. If you notice that the paste is too thick, you can add a few tablespoons of water to achieve a creamier texture.
Once the paste is well blended, I recommend using a hand mixer to gradually add extra virgin olive oil. It is important to add the oil slowly to allow for the proper emulsification of the ingredients. This will give the paste a silky consistency and a richer taste. Continue blending until the paste becomes creamy and shiny. Finally, adjust the salt and pepper to taste. You can also add other spices, such as paprika or fresh herbs, to give it an extra flavor.
Once the paste is ready, let it cool slightly before serving. It is ideal on a slice of fresh, crunchy bread or on toasted bread, which will add a pleasant texture. You can garnish with a few fresh parsley leaves or thin slices of tomatoes for a contrast of colors and flavors. This bean paste is not only delicious but also very nutritious, being an excellent source of plant-based protein. Enjoy your meal!
