Rosemary-spiked Meatballs
Ingredients: 275 g ground lamb (I used pork and beef) 60 g Greek Myzithra cheese (I used parmesan) 1 egg (I used it too) sun-dried tomato pesto (I added a bit of mustard and garlic... I forgot to take a picture) grated lemon zest (I didn't add it, I replaced it with chopped parsley) fresh chopped rosemary (to taste) I didn't add it here either because they will take the flavor from the rosemary sticks on which they will be placed rosemary sticks to place 3 meatballs salt and pepper to taste (added by me) paprika (I added this too)
Spicy meatballs are a delicious and versatile choice, perfect for both a gathering with friends and a family dinner. To start, gather all the necessary ingredients: ground meat (you can use pork, beef, or a combination of both), finely chopped onion, crushed garlic, eggs, breadcrumbs or cornmeal, salt, pepper, and your favorite spices. You can add chopped chili peppers, paprika, or even herbs like oregano and thyme for an extra flavor boost.
In a large bowl, combine all the ingredients, making sure to mix them well until you achieve a homogeneous mixture. Knead the mixture with your hands, just like for meatballs, to give it a compact texture and allow the flavors to blend. Once you have a well-bound mass, form equal-sized balls, which you can place on a greased baking tray with a drizzle of oil. Make sure there is enough space between the meatballs for even cooking.
Preheat the oven to 190-200 degrees Celsius. Once the oven is ready, place the tray with the meatballs inside and let them bake for about 20-25 minutes. It is important to check the meatballs from time to time, turning them a few times to ensure even browning. When they are done, remove them from the oven and place them on paper towels to absorb the excess oil.
For a rustic look and an innovative presentation, take rosemary sticks and carefully clean them, leaving a tuft of needles at the top. Then, skewer three meatballs onto each stick, creating a kind of delicious kebab. Arrange the meatballs on platters and decorate them with thin slices of lemon, adding a fresh and aromatic touch. This dish pairs perfectly with a glass of white wine or a cold beer, making it ideal for enjoying during a relaxing evening.
If you prefer a more intimate atmosphere, you can serve them as a rustic dinner by the light of a candle.
