Rabbit ragout with cherries, bacon, and plums

To prepare a delicious gourmet-style rabbit recipe, we start by cutting the rabbit into pieces, being careful to separate the thighs from the fillets. These pieces will be easier to cook and will allow for even marination. After cutting the meat, we drizzle the pieces with extra virgin olive oil and add fresh lemon juice. These ingredients will not only enhance the meat's flavor but also help tenderize it. We generously season with salt and white pepper, ensuring that each piece is well coated. We let the meat marinate for about 2 hours, so the flavors penetrate deeply into the meat.
Meanwhile, we prepare the 6-liter aluminum pot of the Crock Pot. We activate the sauté function and wait for it to heat up well. Once the pot is hot, we add the rabbit pieces and sauté them until they are golden on all sides. This process will add a crispy texture and deepen the flavor of the meat. At the end of this time, we add freshly grated ginger, which will provide a spicy and refreshing note to the dish. We put the lid on and let the dish cook leisurely. 15 minutes before finishing cooking, it’s time to adjust the taste with salt and white pepper, to ensure the flavors are perfectly balanced.
