 Ingredients: 2 medium-sized apples; 5 eggs; 5 tablespoons of oil; 6 tablespoons of flour; 1 packet of vanilla sugar; 1 vial of lemon essence; 1 packet of baking powder; 1 lemon (just the juice). Cream: 1 packet of Dr. Oetker vanilla cream; 4 tablespoons of sugar; 1 vial of lemon essence; 1 cup of milk (even less, to be thicker); Glaze: 1 cup of water; 6 tablespoons of sugar; 4 teaspoons of cocoa; Syrup: 1 cup of water; 3 tablespoons of sugar; 1 vial of rum essence.

To prepare this delicious apple cake, we will start by preparing the necessary ingredients and efficiently organizing our workspace. The first step is to peel the apples. Choose fresh apples, preferably aromatic varieties that hold their shape during baking. Peel them, then cut them into quarters, carefully removing the seeds. Once you have the quarters, cut them into smaller pieces, depending on the size of the pan you are using. I opted for a pot, but you can also use a baking tray. Squeeze the juice of half a lemon over the cut apples to prevent them from oxidizing and set them aside.

Now, let’s focus on preparing the batter. Start by separating the eggs, making sure not to leave any yolk in the whites. In a bowl, combine the yolks with 5 tablespoons of oil, mixing them well until you obtain a fine mayonnaise. In another bowl, beat the egg whites until foamy, then gradually add the 5 tablespoons of sugar, continuing to mix until you obtain a firm foam that holds peaks.

Add the baking powder quenched with the juice of the other half of the lemon, along with the vanilla sugar, and gently mix to avoid losing air from the egg whites. Incorporate the yolks, mixing with delicate movements from bottom to top. Once the mixture is uniform, gradually add the 6 tablespoons of flour, continuing to mix carefully.
