 Ingredients: For the dough: 7 eggs, 3 tablespoons cocoa, 6 tablespoons sugar, 4 tablespoons flour, 1/2 baking powder. For the cream: 250 g butter (cube), 4 tablespoons powdered sugar, 150 g ground walnuts (150 g coconut), 2 packets vanilla sugar, 350 ml milk, 4 tablespoons flour, 1 bottle rum essence if using nuts, 2 bananas.

Base: We start by preparing the delicious base of our cake. We take 7 egg yolks and beat them well with 6 tablespoons of sugar, stirring vigorously until we obtain a creamy and light-colored mixture. We add 3 tablespoons of cocoa, which will give an intense flavor and irresistible aroma. In another bowl, we beat 7 egg whites until stiff peaks form, then gradually fold them into the yolk mixture. It is important to mix carefully, using a spatula, to preserve the air in the mixture. We then incorporate 4 tablespoons of flour and 1/2 packet of baking powder, mixing gently until we achieve a homogeneous mixture. We preheat the oven to 180 degrees Celsius and pour the batter into a baking tray lined with parchment paper. We bake for 25-30 minutes or until the base passes the toothpick test. Once baked, we remove the base from the oven and turn it onto a damp towel, carefully rolling it to give it a nice shape.

Cream: To prepare the cream, we take 4 tablespoons of flour and mix them with 1 tablespoon of sugar in a container. We add 350 ml of milk and place the mixture over heat, stirring constantly until it thickens. Once the cream reaches the desired consistency, we let it cool completely. In the meantime, we prepare the nut mixture. We beat 250 g of margarine or butter with 150 g of sugar and vanilla sugar until we obtain a fluffy cream. We add 200 g of ground walnuts or, for those who prefer an exotic touch, coconut. If you opt for coconut, you can add a drop of food coloring to give the cream a livelier color. We mix well until we obtain a homogeneous mixture.

Assembly: Now that we have all the components, we start assembling the cake. We carefully unroll the base and fill it with the cold cream, spreading it evenly. We place slices of banana on top of the cream to add a fresh flavor and pleasant texture. After adding the bananas, we roll the base back up, being careful not to break it. Finally, we decorate the cake with melted chocolate glaze or a mixture of cocoa and powdered sugar, and for a special touch, we sprinkle coconut on top. This cake is not only a delight for the taste buds but also a true visual feast, perfect for any occasion!
