Sour Cherry Roll
Ingredients: Swiss roll: 4 eggs, 4 tbsp sugar, 4 tbsp flour, 1 tbsp cocoa. Cream: 1 packet of vanilla pudding, 300ml milk, 150g sugar, 100g margarine, cherry jam. Glaze: 100g chocolate, 1 teaspoon honey, 50g margarine.
To prepare a delicious roll, the first step is to take care of the roll sheet. In a large bowl, we mix the eggs with the sugar until we obtain a fluffy and light-colored mixture. It is essential that the sugar is completely dissolved to ensure a fine texture. Then, we gradually add the sifted flour, gently mixing with a spatula so as not to lose the air in the mixture. It is important not to mix too much, just until the ingredients are integrated. If desired, we can also add a pinch of salt or vanilla essence to enhance the flavor.
We prepare a baking tray, lining it with parchment paper, making sure it is well stretched. We pour the mixture into the tray and level it evenly, ensuring it reaches the corners. We place the tray in the preheated oven at 180 degrees Celsius and bake for about 12-15 minutes, until the sheet becomes slightly golden and elastic to the touch. When ready, we take the tray out of the oven and cover the sheet with a damp towel, letting it cool slightly.
After the sheet has cooled, we dust it with a bit of flour to prevent sticking, then we carefully roll it up, being careful not to break it. This step is essential to give it the desired shape. In the meantime, we prepare the delicious cream. We make the cream according to the instructions on the package, using only 300 ml of milk, and after the cream has cooled, we incorporate the diced margarine. We mix well until the cream becomes homogeneous.
We take the roll out of the parchment paper and carefully unroll the sheet. Over the entire surface of the roll, we spread a generous layer of cream, followed by a layer of jam, which will add a note of freshness and sweetness. We carefully roll the sheet again, ensuring the filling remains well sealed inside. We leave it in the fridge for an hour to firm up and maintain its shape.
After the time has passed, we take the roll out of the fridge and glaze it with melted chocolate or another type of preferred glaze, and then we decorate it as desired, using fresh fruits, nuts, or chocolate flakes.
