To prepare a delicious lentil soup, we start by gathering the necessary ingredients. We will need a medium onion, a clove of garlic, a medium carrot, lentils (preferably green or red lentils), dry white wine, curry, thyme, olive oil, salt, and pepper. Make sure the lentils are well washed before use, and all the vegetables are fresh.

The first step is to prepare the vegetables. Cut the onion into quarters, the garlic can be chopped finely or left whole, and the carrot is cut into large pieces. These vegetables will add a deep flavor to our soup. In a large pot, add a few tablespoons of olive oil and heat it over medium heat. When the oil is hot, add the onion, garlic, and chopped carrot. Let them sauté gently, stirring occasionally, until the onion becomes translucent and the carrot starts to soften, about 5-7 minutes.

Once the vegetables are cooked, it’s time to add the white wine. Pour about 100 ml of wine into the pot and let it boil for a few minutes until the alcohol evaporates and its flavor remains concentrated. This will add a refined taste to the soup and will perfectly complement the lentils. After the wine has boiled, add the curry, mixing well to incorporate. The curry will give the soup an exotic note, so feel free to adjust the amount according to your preferences.

Now, it’s time to add the washed lentils and water. Cover the ingredients with water, leaving space to avoid boiling over. Let the soup simmer over medium heat, covered, for about 25-30 minutes, or until the lentils become soft and change their texture. Check occasionally, stirring gently to prevent sticking to the bottom of the pot.

Once the lentils are cooked, take an immersion blender and blend everything until you achieve a smooth and creamy consistency. If you prefer a chunky soup, you can leave some whole lentils. Now add a sprig of fresh thyme, salt, and pepper to taste. Cover the soup and let it rest on low heat for 5 minutes, so the flavors blend perfectly.

Finally, serve the soup hot, garnished with a few fresh thyme leaves and, if desired, with a slice of toasted bread on the side. This lentil soup is not only nutritious but also full of flavors, making it ideal for cool evenings or a comforting lunch. Enjoy every bite!
