Aloo Mutter - Curry with Peas and Potatoes
Ingredients: For 4 servings: 30 g unsalted butter 4 green onions, finely chopped 1 teaspoon grated ginger 2 cloves of garlic, finely grated 2 1/2 teaspoons ground coriander 1/2 teaspoon turmeric 1/2 teaspoon cumin seeds 1/2 teaspoon garam masala 1/2 teaspoon salt (adjust to taste) a pinch of cayenne pepper (adjust to taste) 3 tomatoes, chopped 250 ml water 700 g potatoes, chopped as desired 350 g fresh or frozen peas medium chopped coriander leaves for garnish (I don't like green coriander, so I used green parsley)
We start with a simple yet flavorful recipe that will transform an ordinary meal into an extraordinary culinary experience. To achieve a delicious dish, it is essential to choose the ingredients carefully and follow the steps rigorously. We begin by sautéing the onion on low heat in a generous amount of butter. This will be the aromatic base of our dish. We let the onion cook for about 10 minutes until it becomes translucent and starts to release its sweet aroma.
Once the onion reaches the desired texture, we add finely chopped garlic, grated ginger, and a selection of spices we like: cumin, turmeric, or even a dash of chili, depending on preferences. These will add depth and an irresistible flavor. After about a minute, when the spices release their aroma, we add the chopped tomatoes. It is important to let them sauté for 3-4 minutes to release their juice and create a savory base.
At this point, we pour enough water to cover the ingredients, and when the mixture comes to a gentle boil, we add the diced potatoes. It is essential to adapt based on the type of potatoes used; if they are new, the boiling time will be shorter, so we ensure they are cut evenly for uniform cooking. After 10 minutes, we add the peas, whether fresh or frozen. If we opt for frozen peas, it is recommended to add them when the potatoes are already 80% cooked to avoid overcooking.
We let everything simmer on low heat, stirring occasionally, until the potatoes and peas are fully cooked and the aroma has penetrated each ingredient. At this stage, we adjust the seasoning with salt and pepper to taste to achieve a perfect balance. Once the dish is ready, we garnish with fresh coriander leaves, adding a touch of freshness and color. We serve hot, alongside a slice of crusty bread or basmati rice, to savor every bite.
