- 400 ml cooking cream
- 2 egg yolks
- Fresh parsley and lovage, for garnish
- Hot pepper and lemon juice, for serving

Step by step for a perfect tripe soup:

1. Preparing the tripe:
Start by cleaning the beef tripe of fat. If the tripe is a bit tougher, rub it well with coarse salt, lemon juice, and vinegar. Let it sit in a bowl with water, baking soda, and the mentioned spices overnight. This step helps to soften the tripe while eliminating any unpleasant odor.

2. Boiling the tripe:
In a large pot, add the tripe, 3-4 carrots (cut into large pieces), 4-5 cloves of garlic, 3-4 bay leaves, 1 whole onion, whole pepper, and enough water to cover all ingredients.
