This recipe for cabbage rolls is a traditional variant that combines the rich flavors of meat with the delicate texture of rice and cabbage leaves. I invite you to discover the steps to prepare these delicious cabbage rolls, which are sure to bring joy to your table.

Preparation time: 30 minutes
Cooking time: 2 hours
Total time: 2 hours and 30 minutes
Number of servings: Approximately 23 cabbage rolls

Necessary Ingredients:

- 1 kg pork (or a mix of pork and beef)
- 200 grams of rice
- 2 large onions
- Pepper (to taste)
- 1 kg sour cabbage
- 100 ml tomato juice
- 1 pack of concentrated tomato paste
- Bay leaves (3-4 leaves)
- Thyme sprigs (fresh or dried)
- Dried dill leaves (or fresh, if available)
- 150-200 ml water (depending on the fat content of the meat)
- Smoked bacon (approximately 200 grams)
- Smoked knuckle (optional, 200 grams)

Preparation Steps:

1. Preparing the Cabbage:
Start by soaking the cabbage. Leave it in cold water for a few hours to remove excess salt. Then, rinse the cabbage leaves well under running water to clean them of any impurities.

2. Preparing the Filling:
- Finely chop the onions and sauté them in a pan with a little oil until they become translucent. This step will add a delicious flavor to the mixture.
- In a large bowl, combine the minced meat with rice, sautéed onion, thyme, sweet paprika, dill, salt, and pepper. Add a few cubes of smoked bacon to intensify the flavor. Depending on the fat content of the meat, adjust the amount of water added (150 ml for fatty meat, 200 ml for lean meat). Mix well until you get a homogeneous paste.

3. Rolling the Cabbage Rolls:
- Take a cabbage leaf and place a tablespoon of filling at the base of it. Fold the side edges over the filling and roll the cabbage leaf towards the top. Make sure the cabbage rolls are well sealed so they do not open during boiling.
- Continue rolling all the cabbage rolls until the filling is finished.

4. Preparing the Pot:
- Choose a large pot (4-5 liters) and chop some of the remaining cabbage into thin strips, which you will place at the bottom of the pot. This will prevent the cabbage rolls from sticking to the bottom of the pot.
- Carefully arrange the cabbage rolls in the pot, interspersing them with pieces of smoked knuckle, bay leaves, peppercorns, and thyme sprigs. Add the remaining chopped cabbage on top.

5. Cooking the Cabbage Rolls:
- Pour the tomato juice and concentrated tomato paste over the cabbage rolls, then add boiling water to completely cover them.
- Cover the cabbage rolls with two sheets of parchment paper, then place a round baking tray on top and put another pot filled with water as a weight. This trick will ensure that the cabbage rolls remain submerged in the cooking liquid.
- Boil on medium heat until it starts to boil, then reduce the heat to low. Gently shake the pot occasionally to prevent sticking.

6. Finishing the Dish:
- Let the cabbage rolls simmer covered for about 2 hours. After this time, you can transfer the pot to a preheated oven at 180°C to allow them to reduce and develop a delicious crust.
- If desired, you can add a little cabbage brine at the end for an even more intense flavor.

Practical Tips:

- Meat Choices: Pork adds extra flavor, but you can also experiment with beef. If you prefer a lighter taste, choose lean meat.
- Variations: You can add spices like smoked paprika or garlic for extra flavor. You can also replace rice with quinoa for a healthier option.
- Serving: Cabbage rolls are served hot, alongside sour cream and hot peppers. A slice of fresh bread will be the perfect accompaniment!

Nutritional Benefits:

Cabbage rolls are an excellent source of protein due to the meat and rice, also providing fiber from the cabbage. When consumed in moderation, they represent a balanced meal rich in nutrients.
