Baked cheese pancakes

 Ingredients: 3 eggs, 500 ml milk, 400g cottage cheese, sour cream, 2-3 tablespoons sugar, raisins, vanilla essence.

To prepare the delicious cheese-filled pancakes, we start by making the batter. In a large bowl, we crack the two eggs and whisk them vigorously with a whisk or mixer until frothy. Gradually, we add the 500 ml of milk, continuously mixing to obtain a homogeneous mixture. Then, we begin to incorporate the flour, one tablespoon at a time, until we achieve a consistency similar to thick sour cream. It is important to avoid lumps, so we can use a mixer or whisk to ensure a smooth texture.

Once the batter is ready, we prepare to cook the pancakes. We heat a non-stick skillet over medium heat and, using an unusual tool, such as a fork with a napkin tied to it, we lightly grease the skillet with oil to prevent the pancakes from sticking. We pour half a ladle of batter into the skillet and, with a quick motion, swirl the skillet to spread the batter evenly, thus forming a thin pancake. We let it cook for a few minutes until the edges turn golden and easily lift off the skillet. We flip the pancake to the other side and let it brown as well. We proceed in the same manner with the remaining batter, yielding about 5 pancakes, but it’s not a problem if we manage to make more.

While the pancakes cool, we prepare the filling. In a separate bowl, we combine 400 g of cottage cheese with one egg, 2-3 tablespoons of sugar, raisins to taste, and a few drops of vanilla essence. We mix well until we obtain a homogeneous composition, which will give a sweet and aromatic taste to each pancake.

Now that we have the pancakes and the filling ready, we prepare to assemble them. We take each pancake, place a portion of the cheese filling on one side, and carefully roll it up, forming a roll. We place the filled pancakes in a heat-resistant dish or a tray, on a greased aluminum foil to prevent sticking.

To add extra flavor, we cover the pancakes with a mixture of sour cream, to which we add a little sugar and vanilla essence, mixing well to obtain a creamy composition. We pour this sour cream over the pancakes arranged in the tray, making sure to cover them evenly.

We preheat the oven to 180 degrees Celsius and place the tray with pancakes inside. We let them bake for about 40-50 minutes until the sour cream turns slightly golden and the pancakes become hot and aromatic.

Once the baking time is over, we carefully remove the tray from the oven and let the pancakes cool slightly before serving. These cheese-filled pancakes are a perfect delight for any meal, and the aroma of vanilla and the sweetness of raisins bring a touch of joy to every bite. Enjoy!
