Chicken Ostropel with Peppers (II)

 Ingredients: -500 g chicken wings and thighs -1 onion -300 g bell peppers -2 cloves of garlic -10 g flour -1 bunch of parsley -75 ml oil -5 g thyme (I didn't add this) -300 ml homemade broth (this was not in the recipe) -5 g paprika (I didn't add this because I used broth and it was fine) -salt, pepper -200 g tomatoes (I used canned tomatoes)

To prepare a delicious chicken recipe with vegetables and garlic sauce, we start by ensuring that all the meat is clean and well-portioned. We wash the chicken under a stream of cold water and cut it into appropriately sized pieces so that it cooks evenly. Meanwhile, we take care of the vegetables: we peel the onion and peppers, which we cut into julienne, meaning thin strips, so that they cook faster and combine perfectly with the other ingredients.

For tomatoes, if you use fresh tomatoes, blanch them for a few minutes in boiling water, then peel them easily. We cut the tomatoes into slices and set them aside. If you have canned tomatoes, they are already prepared for use. The garlic is peeled and turned into a fragrant sauce by mixing it with salt and water until we obtain a smooth paste.

In a heated pan, we add the oil and sauté the chicken, letting it simmer until it becomes slightly browned. We then remove it to a plate, preparing space for the vegetables. In the same pan, we add the chopped onion and peppers, letting them sauté in the fragrant oil, which will enhance the flavor of the dish. After a few minutes, we add the canned tomatoes and, for extra flavor, we also pour in 300 ml of homemade broth, which will add a rich taste to the sauce.

To thicken the sauce, we dissolve the flour in 50 ml of water, mixing well to avoid lumps, and add it to the pan. We let the mixture simmer on low heat, stirring occasionally, until the sauce reduces and becomes thick. Finally, we add the finely chopped parsley, which will give a fresh aroma and complete the dish.

Now that the sauce is ready, it’s time to assemble the dish. In a heat-resistant dish, we place the chicken together with the sautéed vegetables and the fragrant sauce. We pour the garlic sauce over all the ingredients, infusing them with its strong aroma. If you wish, you can also sprinkle a little paprika or thyme, adding a touch of extra flavor. We place the dish in the preheated oven at medium heat, letting the dish bake for 15 minutes. This way, all the flavors will blend, and the meat will become tender and flavorful. In the end, you will have a delicious dish, perfect for a family meal.
