POTATO DUMPLINGS

To prepare delicious potato dumplings, we start by peeling fresh potatoes. Choose quality potatoes that are starchy to achieve a fluffier composition. After peeling, we grate them, making sure to achieve a fine texture. It is important to squeeze them well to remove the excess water, as too much moisture can affect the final consistency of the dumplings.

In a large bowl, we mix the grated potatoes with salt, pepper, and a pinch of nutmeg, which will add a subtle aroma and refined taste. We then add two egg yolks, which will bind the mixture, and gradually start incorporating flour until we obtain a pliable dough that is not too hard or too soft. Meanwhile, we prepare a delicious mixture of sautéed onion and crispy bacon, which will add a savory note to the dish. After the dumplings are cooked, we remove them with a slotted spoon and transfer them to the wok with onion and bacon, letting them soak up their flavors.

For an extra burst of flavor, grate parmesan, pecorino, or cheese on top of the dumplings and put everything in the oven for a few minutes until the dumplings become golden and crispy on the outside. A valuable tip is to check the consistency of the mixture before boiling all the dumplings: try one. If it falls apart, add more flour to achieve the desired texture.
