Preparation of shells: We start by preparing the tasty and crispy shell, which will constitute the delicious base of our swan. In a large pot, bring water, oil, and salt to a boil over medium heat. When the mixture reaches boiling point, add the flour all at once, stirring vigorously with a spatula or wooden spoon to avoid lumps. This step is crucial, as the flour must completely absorb into the hot liquid. Once the mixture becomes a homogeneous mass, let it cool slightly to avoid cooking the eggs when added. The next step is to add the eggs one at a time, mixing continuously until fully incorporated. This mixture will become elastic and shiny.

Using a piping bag with a heart-shaped nozzle, we pour the mixture onto a baking sheet lined with parchment paper, forming filled hearts. The shells bake at a high temperature for 13 minutes until they become golden and fluffy. After this interval, reduce the flame to low to allow for even baking and to achieve a perfectly caramelized color. From the same mixture, using a small tip, we also pour the swan necks in the shape of an S, which will add an elegant look to our dish.

Preparing the cream is an essential step. In a pot, bring one liter of milk to a boil. In a separate bowl, mix the remaining milk with flour, 300 g of sugar, a pinch of salt, and the eggs, except for two egg whites. These will be beaten separately with 150 g of sugar and bourbon vanilla sugar to achieve a light and airy foam. Once the milk has boiled, carefully pour it over the egg and flour mixture, stirring continuously. The mixture is cooked over low heat, stirring constantly, until it becomes a thick cream, similar to soft polenta. When the cream has cooled slightly, incorporate the beaten egg whites to achieve a fine and airy texture.

Assembling the swan is a moment of culinary creativity. After the shells have completely cooled, carefully cut them in half. Using a piping bag, fill each half with cream, followed by a generous layer of whipped cream, sweetened with sugar and flavored with vanilla essence. Carefully place the swan's neck and wings, creating an attractive presentation. For an elegant finishing touch, dust with vanilla powdered sugar.

To complete this refined dessert, we prepare a topping of melted chocolate and berries. We form two circles on the plate, imitating a lake, and place the swans facing each other, thus creating a storybook scene. Enjoy your meal!
