green tomato salad for winter
Ingredients: 6 kg green tomatoes, 2-3 onions, 5-6 cloves of garlic, 6 hot peppers (optional), 2 bunches of celery leaves, 1 teaspoon of dill seeds, 6 tablespoons of pickling salt, 12 tablespoons of sugar, 1 liter of water, 500 ml of vinegar, 6 aspirin (one packet of preservative)
To prepare a fresh and invigorating green tomato salad, we start by carefully selecting the ingredients. We slice the green tomatoes into thin slices, ensuring a uniform thickness for proper marination. The hot pepper, preferably a fresh and aromatic one, is cut into rings or cubes, depending on preference, to add a spicy note to the salad. The onion is sliced into thin scales, allowing the flavors to integrate better into the mix.
The garlic, an essential ingredient, is finely chopped so that its intense aroma spreads evenly. The celery leaves, finely chopped, will add a note of freshness and a slightly sweet taste. Once we have prepared all the vegetables, we gently mix them in a large bowl, ensuring they combine well. It is time to add the crushed aspirin, which will act as a natural preservative, the dill seeds, which provide an unmistakable aroma, salt, and sugar, which will balance the flavors.
To finalize the mixture, we pour in cold, preferably filtered water, and a suitable amount of vinegar to give the salad a tangy appearance. We mix everything energetically, ensuring that all the ingredients are well incorporated. It is important to let the salad marinate for 24 hours in a cool place. During this time, we recommend mixing occasionally to allow the vegetables to absorb the flavors and marinate evenly.
The next day, when the vegetables have soaked up the spices' aromas, we prepare to transfer the salad into clean, sterilized jars. It is essential to ensure that the jars are completely sanitized to prevent spoilage. We fill the jars with the salad, making sure to include the formed juice to keep all the concentrated flavors. After filling the jars, we seal them tightly using lids that fit perfectly.
We store the jars in the pantry or cellar, in a cool and dark place. The salad can be consumed after a few days, allowing time for the ingredients to combine and develop a rich flavor. This green tomato salad will be an excellent choice to accompany meat dishes or simply as an appetizer, bringing a touch of freshness to your tables. Enjoy your meal!
