Coffee and Raspberry Ice Cream with Chocolate Cream

 Ingredients: coffee ice cream 1 cup of coffee 500 ml milk 5 tablespoons sugar 4 eggs 200 ml liquid cream raspberry ice cream 500g raspberries 500 ml milk 5 tablespoons sugar 4 eggs 200 ml liquid cream chocolate cream 200g margarine 1 plain chocolate 2 eggs

Coffee ice cream is a delicacy that combines the intense aroma of coffee with a creamy texture, offering a refreshing and revitalizing experience. It all starts with a cup of freshly brewed coffee, and I decided to prepare two cups – one for the recipe and the other to enjoy its aroma while cooking. In a saucepan, we bring the milk to a boil along with four tablespoons of sugar, stirring constantly to ensure that the sugar dissolves completely. It is important to let the milk simmer gently until the sugar melts and a homogeneous mixture forms. After boiling, we add the hot coffee and mix well, allowing the flavors to combine.

Next, we take care of the eggs. We carefully separate the egg whites from the yolks, making sure that no trace of yolk remains in the whites, as this could affect the consistency of the foam. In a bowl, we beat the yolks with the last tablespoon of sugar until they become a fine, light-colored cream. This mixing will add a sweet taste and a rich texture to the ice cream. We add this yolk mixture to the hot milk, stirring constantly, and let it simmer on low heat for about 10 minutes until the mixture thickens slightly. After obtaining a slightly denser cream, we let it cool.

Meanwhile, we turn our attention to the egg whites, which we will whip into a foam. I decided to use the kitchen robot I received as a wedding gift. It is a reliable helper in the kitchen and makes my life much easier. Once the egg whites have become a firm and glossy foam, we move on to whipping the cream, choosing natural cream for a better taste. Both mixtures – the whipped egg whites and the cream – are carefully added to the boiled and cooled milk, gently mixed with a spatula to maintain the aeration.

All these delicious layers are placed in a plastic container and left in the freezer for a few hours, ideally overnight, to firm up well.

Raspberry ice cream is just as tempting and fresh. For this, we put the raspberries in the kitchen robot, adding a little milk to make a fine foam. We then proceed similarly to the first recipe: we boil the milk with sugar, add the raspberries, and after it cools, we incorporate the whipped egg whites and cream.

Finally, the chocolate cream comes as a perfect finishing touch. We melt the margarine and add the chocolate cut into cubes, stirring until it completely melts and becomes a homogeneous mixture. In the end, we add the two eggs, mixing well until we obtain a fine and fluffy cream. This combination of ice creams – coffee, raspberry, and chocolate – is not just a simple recipe but a true journey of flavors that will surely impress any dessert lover.
