Bishop's Bread in 3 Colors (Cake in 3 Colors)
Ingredients: 5 eggs, 7 tablespoons of flour, 6 tablespoons of sugar, 6 tablespoons of oil, 1 teaspoon of baking powder, grated zest from 1/2 lemon, cocoa, powdered sugar, butter and flour for greasing the pan or baking paper.
We separate the egg whites from the yolks, an essential step in preparing this delicious cake. We start with the yellow mixture: in a large bowl, we add the 3 tablespoons of sugar over the yolks and mix vigorously until we obtain a fluffy foam, light yellow in color. This process will not only improve the texture but also bring a pleasant, sweet taste. Next, we incorporate the 3 tablespoons of oil, and for a touch of freshness, we add the grated lemon zest, which will provide an irresistible fragrance. We sift 3 tablespoons of flour mixed with ½ teaspoon of baking powder and gradually add it to our mixture, mixing until it turns into a smooth and homogeneous cream.
Now we take care of the white mixture: in another bowl, we add the remaining 3 tablespoons of sugar over the egg whites and mix until we obtain a firm foam, similar to meringue. It is important to be patient and not rush; a well-beaten foam will make the cake fluffier. We add the remaining oil (3 tablespoons) and, using a spatula, gently fold in the meringue, taking care to maintain the aeration. Then, we sift 4 tablespoons of flour (which has already been mixed with the baking powder) and incorporate it with the same care, mixing from top to bottom, so as not to lose the air from the egg whites.
We prepare the baking pan by greasing it with butter and sprinkling a quantity of flour, which will prevent the cake from sticking. We carefully pour the yellow mixture into the pan, and to add a touch of chocolate, we sprinkle bitter cocoa through a sieve, in a uniform layer, about the thickness of a knife blade. This detail will not only bring an intense flavor but also an attractive visual effect. Over the cocoa layer, we add the egg white mixture, being careful to distribute it evenly.
We gently tap the pan on the table to even out the mixture and eliminate any air bubbles. Now, the oven should already be preheated to 180°C, and we are ready to place the pan inside. We bake the cake for 30 minutes, but it is important to do the toothpick test to ensure it is evenly baked. Once out of the oven, we let the cake cool on a rack, and in the end, we dust it with sugar for an elegant appearance. We cut generous slices and serve with joy, savoring every bite of this delicacy.
