Yogurt Pie

 Ingredients: 1 pack of pastry sheets, 1 l of yogurt, 300 g of cheese (of your choice), 9 eggs, a little flour, and a little oil for greasing the tray, salt.

We start by preheating the oven to 180 degrees Celsius, so that it is ready to provide that even heat necessary for the perfect baking of our dish. In the meantime, we take care of the cheese, which we grate to obtain a fine texture that will easily integrate into the yogurt mixture. Slowly, we add the grated cheese to the yogurt, mixing with a spatula or spoon until completely homogeneous.

Now, we focus on the eggs. We separate the egg whites from the yolks of 6 eggs. In a clean bowl, we beat the egg whites with an electric mixer or a whisk until they become fluffy and form stiff peaks. This step is essential, as the beaten egg whites will give our dish an airy and light texture. In another bowl, we mix the yolks well with the yogurt, ensuring they combine perfectly, then we add the beaten egg whites, gently folding with a spatula to avoid losing the air trapped in the egg whites.

We move on to preparing the tray. We take a medium-sized tray and grease it with oil, making sure it is evenly coated, then we dust it with flour to prevent sticking. Now we are ready to assemble the pie. We place two to three sheets of pastry in the tray, being careful to layer them on top of each other, then we add a generous layer of the yogurt and cheese mixture. We repeat this process, alternating the pastry sheets with the yogurt, until we finish all the ingredients, ending with a final layer of pastry sheets.

To add extra flavor, we beat the remaining 3 eggs well and pour them evenly over the pie, ensuring that every corner is covered. Now, the oven is ready to receive our tray. We place it in the preheated oven and let it bake for about 30-40 minutes, or until the pie becomes golden brown and beautifully golden on top.

Once baked, we take the pie out of the oven and let it cool slightly before cutting it. It can be served warm or at room temperature, perfect as an appetizer or dessert. Enjoy your meal and happy cooking!
