Focaccia
Ingredients: dough black flour 500 g yeast 25 g lukewarm water 250 ml 50 ml olive oil salt 1/2 teaspoon sugar 1 tablespoon filling and decoration: pitted olives 100 g red onion 2 pcs grated cheese 150 g rosemary 2 sprigs 50 ml olive oil cherry tomatoes
I mixed the sifted flour with salt, making sure that the ingredients are well integrated to obtain a uniform dough. Then, I poured in the yeast, which had previously been dissolved in warm water along with sugar, stirring carefully to activate the yeast. It is essential that the water is warm but not hot, so as not to destroy the yeast. After obtaining a homogeneous composition, I began to gradually add warm water, continuously mixing until the dough started to gain consistency.
Once I obtained an elastic dough, I kneaded it with olive oil, which will not only give it a refined taste but also a fluffier texture. When the dough became smooth and elastic, I let it rise in a warm place, covered with a clean towel, for about 30 minutes. After this time, the dough had doubled in volume, a sign that the yeast had done its job.
I divided the dough into two equal parts. I rolled out the first piece using a rolling pin, forming a thin sheet which I placed in a baking tray greased with olive oil. On top of this, I added the delicious filling made from pieces of olives, grated cheese, and slices of red onion, which will bring a sweet-sour taste.
I rolled out the second piece of dough gently, carefully placing it over the prepared filling. On top, I added onion slices, a few pieces of olives for extra flavor, sliced tomatoes, and fresh rosemary, which will bring an unmistakable aroma. I generously drizzled with olive oil, making sure that each ingredient is well covered.
After finishing the assembly, I let the dish rise again for 10 minutes, to allow it to become even fluffier. Then, I placed it in the preheated oven at 180 degrees Celsius, where I left it for 30 minutes, until it developed a golden and appetizing crust.
Once cooled, this dish can be served cold, being perfect for a snack, a lunch, or a light dinner. The flavors combine perfectly, and the texture is pleasant, making this recipe an excellent choice for any occasion.
