Strawberry Flanks
To create a delicious and refined dessert, we start by thoroughly mixing the flour with the other ingredients. In a large bowl, we add the flour, eggs, sugar, and coconut. We mix everything with a spatula or a mixer on low speed until we obtain a homogeneous composition. Then, we gradually begin to add 300 ml of milk, continuing to mix to ensure that no lumps remain. After we have well integrated the milk, we turn our attention to the rest of the milk.
We bring the rest of the milk to a boil in a saucepan over medium heat. It is important to stir occasionally to prevent the milk from burning. Once the milk has started to boil, we carefully pour it over the flour and egg mixture, constantly mixing to prevent lumps from forming. We continue to simmer the mixture on low heat, stirring continuously until it thickens, becoming a smooth and velvety cream. After the homogenization is complete, we let the cream cool completely before using it.
In the meantime, we take care of the dough. If we have chosen to use frozen pastry dough, it is essential to let it thaw completely. Once the dough is ready, we use a hot knife to cut it into squares of about 6-7 cm. This method will help us achieve clean and precise edges. We place the squares of dough on the baking tray that we have lined with parchment paper, taking care to sprinkle it with a little cold water to create steam during baking, which will make the dough fluffier.
We bake at a medium temperature for about 15 minutes, or until the dough turns golden and delicious. After they are baked, we let them cool completely. Here comes the creative part! With the help of a piping bag, we draw elegant cream patterns on each square of dough. We then decorate each piece with fresh strawberry slices, which add a note of freshness and a pleasant color contrast. This dessert will not only be a delight for the eyes but also an explosion of flavors, combining the sweetness of strawberries with the fine texture of the cream and dough. Enjoy it with pleasure!
