Leek soup

Ingredients: 1 leek, oil, water, 1/2 bunch of parsley, 1 yogurt, 2-3 potatoes, salt, pepper (optional sausages)

Leeks are a versatile ingredient that adds a delicate flavor and pleasant texture to dishes, and our recipe will turn this vegetable into the star of a delicious soup. Start by cleaning the leeks, removing the damaged green parts and the tougher sections. Rinse them under cold running water, making sure to remove any impurities or dirt. Once cleaned, slice them into thin rounds, about 1 cm thick, to release their flavors during cooking.

In a large pot, heat a few tablespoons of olive oil or sunflower oil, depending on your preference. When the oil starts to sizzle, add the sliced leeks and let them sauté over medium to low heat, stirring occasionally. The goal is for them to become soft and translucent, which will take about 5-7 minutes. They will develop a sweet flavor that will add depth to the soup.

Once the leeks are well sautéed, add enough water to cover all the ingredients. You can also use vegetable broth for a more intense flavor. After that, chop a few potatoes into evenly sized cubes for even cooking, and add them to the pot. The potatoes will not only improve the soup's texture but will also add substance, making each serving more filling.

Season the soup with salt and pepper, being careful not to overdo the salt, especially if you used vegetable broth. Let everything simmer on low heat for about 20 minutes, or until the potatoes are tender. You can check their consistency with a fork; if it goes through easily, they are ready.

In the final moments of cooking, add a handful of freshly chopped parsley, which will bring a note of freshness and color. Additionally, the yogurt added at the end will give a creamy taste and pleasant acidity, balancing the flavors of the soup. Stir well and allow it to come to a final boil, so all the ingredients blend harmoniously.

If you want a version with extra protein, you can add a few sliced sausages in the last minutes of cooking, but this addition is optional. Finally, serve the soup hot, sprinkled with a little fresh parsley on top, and enjoy a healthy and comforting meal, perfect for cool days. This is a simple yet flavorful recipe that will delight both family and friends.
