Antipasto - platter with vegetables and cheeses
Ingredients: 1 large eggplant, 1 large red onion, 1-2 bell peppers (red and yellow or other colors), 1 garlic, oil + water for garlic sauce, baguette bread, tomatoes (depends on the size of the platter), mozzarella cheese, basil, salt and pepper, prosciutto with melon (I had prosciutto with mozzarella)
To prepare a delicious grilled vegetable recipe accompanied by garlic sauce, the first step is to take care of the main ingredients. We start by peeling the onion, washing it well, and cutting it into thick slices of about 1/2 cm. This will add a sweet flavor and a pleasant contrast to the vegetables. Next on the list is the eggplant, which we wash, peel, and slice into equal pieces, which we sprinkle with salt. This step is essential, as the salt will help draw out the water from the eggplants, thus avoiding an excessively wet result.
After the eggplants, we take care of the peppers and tomatoes. The pepper is washed well, and the tomatoes are sliced thinly, along with the mozzarella, which will add a creamy note to the dish. Fresh basil is finely chopped, and the garlic is crushed and mixed with a pinch of salt, forming a fragrant garlic sauce.
Next comes the cooking stage. We prepare a grill, whether on the stove or charcoal-based, and drizzle it with oil to prevent the vegetables from sticking. Once the grill is hot, we place the onion slices and fry them on both sides until golden and tender. After achieving a pleasant texture, we remove them to a plate and continue with the eggplants, frying them until they are beautifully browned, taking care to turn them to achieve an attractive pattern on their surface.
The pepper is grilled, and after it cools, we place it in a bowl, sprinkling a little salt over it. After a few minutes, we peel it, remove the seeds and stem, and then slice it, preparing it to be arranged on the platter.
To assemble the platter, we place a row of alternating tomatoes and mozzarella in the middle, and on the sides, we arrange the eggplants, onion, and pepper. Additionally, we can add thin slices of cantaloupe, wrapped in prosciutto or our favorite cheese, to provide a contrast of flavors.
The baguette is sliced, drizzled with oil, and spread with garlic sauce, then baked in the oven until it becomes crispy. If desired, you can sprinkle a little basil on top for extra flavor.
The rest of the garlic sauce is placed in small cups, set at each person's table, so everyone can add to their dish as they like. Also, the chopped basil is sprinkled over the vegetables, and they are generously drizzled with garlic sauce. If you prefer a heartier option, you can create sandwiches from toasted bread spread with mustard or mayonnaise, adding slices of eggplant, roasted pepper, and cheese.
