Vegetarian Sausages

Ingredients: 5 eggs, 5 tablespoons of milk, 5 tablespoons of semolina, 7 tablespoons of breadcrumbs, 13 tablespoons of ground walnuts, garlic, seasoning, 30 g of yeast

To prepare a delicious recipe for meatballs with aromatic sauce, we start by separating the eggs. In a large bowl, we place the egg whites and beat them vigorously until we achieve a firm, glossy foam. This step is essential as it will provide a fluffy texture to the final dish. In another bowl, we cream the egg yolks until they become creamy and homogeneous, then we mix them with the warm milk in which we have dissolved the yeast. This combination will help the meatballs rise, making them fluffier.

After we have made this mixture, we carefully fold in the beaten egg whites, being careful not to deflate them. It is important to mix with a spatula, using gentle up-and-down motions to keep the air in the mixture. The next step is to add the semolina and breadcrumbs, which will help bind the ingredients and achieve a pleasant texture. We let the mixture rest for 30 minutes so that the ingredients can meld and the flavors develop.

After this period, it is time to add the other desired ingredients, such as grated cheese, finely chopped dill, or even grated vegetables, depending on personal preferences. Using wet hands, we form equal-sized meatballs, which we will later fry in hot oil until they become golden and crispy.

In parallel, we prepare the aromatic sauce. In a pot, we bring water to a boil together with oil and our favorite spices, such as oregano, parsley, and cayenne. We add a diced bell pepper, a grated carrot, and a finely chopped onion, all of which will enhance the flavor of the sauce. Once the water begins to boil, we add the pepper paste, which will bring a sweet and sour note to the dish.

After the meatballs are fried and have a nice crust, we transfer them to the boiling sauce. We let everything simmer together for about 30 minutes, so the flavors blend perfectly and the meatballs absorb the rich taste of the sauce. This dish is served hot, alongside a side of mashed potatoes or a fresh salad, and each bite will be an explosion of delicious flavors. Bon appétit!
