Rice with Vegetables (risotto with vegetables)

 Ingredients: - 200 g of rice (preferably Carnaroli, Arborio, Vialone) - 1 bunch of green onions; - 1 red pepper; - 1 carrot; - 1/2 bunch of parsley; - 1000 ml of liquid (chicken or vegetable broth or warm water)* - salt and pepper to taste; - olive oil; - optional, grated Parmesan.

The recipe I want to share is delicious, simple, and accessible in any season: rice with vegetables or risotto con verdure. This dish is not only nutritious but also extremely versatile, allowing you to adapt the ingredients according to the season and personal preferences.

To begin with, we take care of preparing the vegetables. It is essential to choose fresh, colorful vegetables that will add not only nutrients but also an attractive look to the final dish. We wash the vegetables well under a stream of cold water, then carefully peel them. We chop the onion into very small rings, the pepper into cubes, and the carrot either into cubes or grated, depending on your preferences. These vegetables will create a flavorful base for the rice.

Next, we take a larger pot, considering that the rice will considerably increase in volume during cooking, even by 4-5 times. We heat a little olive oil or butter in the pot and add the onion (only the white part), sautéing it lightly until it becomes translucent. We continue by adding the pepper and grated carrot, letting them sauté together for a few minutes until they acquire a slightly roasted appearance, releasing their flavors.

After this step, we add the rice, stirring constantly for 2-3 minutes to lightly sauté it. It is important to ensure that each grain of rice is coated with oil and has started to become slightly translucent. We start gradually adding warm broth (vegetable or chicken, depending on preferences), one ladle at a time. We also add the green onion rings for extra flavor, then cover the pot. We let the rice absorb the liquid, adding more as needed, until the grains become al dente, like pasta.

Finally, we season the dish with salt, freshly ground pepper, and finely chopped fresh parsley. For a perfect taste, we can add grated parmesan, tomato sauce, or any other ingredients we think combine well with this dish. Rice with vegetables is delicious and simple, and can be enjoyed both on its own and alongside a glass of dry, light white wine.
