Green Vegetable Soup
Ingredients: * 3 bunches of strawberries * 2 bunches of lamb's lettuce * 1 small salad * 2 bunches of onions * 1 bunch of parsley * celery and carrot (not shown in the picture) * 2 tablespoons of rice * juice from one lemon or sour soup * salt and pepper
To prepare a delicious vegetable soup with greens, we start by carefully cleaning the leaves of the greens and the vegetables we have on hand. We wash all the ingredients under a stream of cold water, making sure to remove any impurities. In a large pot, we boil 2 liters of water and, once it reaches boiling point, we blanch the greens for a few minutes. This process will help preserve the color and flavors, as well as soften the leaves. After blanching, we remove the greens and carefully keep the water, as it will be the base of our soup.
Next, we take care of the vegetables. We finely chop the onion, carrot, and celery. These will add a rich flavor to our soup. In a pan, we heat 2 tablespoons of olive oil, then add the chopped vegetables. We sauté them over medium heat, stirring occasionally, until they become translucent and fragrant. After the vegetables are sautéed, we add two tablespoons of rice, which will help thicken the soup and add a pleasant texture.
Once the mixture is ready, it's time to add the chopped greens, which we can chop as finely as possible to integrate perfectly into the soup. We then pour in the water in which we blanched the greens, along with another 3 glasses of fresh water, to achieve the desired consistency. We season with salt and pepper to taste, being careful not to overdo it, so that the flavors remain balanced. Now, we let the soup simmer on low heat for about 30-40 minutes, so that all the ingredients combine harmoniously and reveal each one's flavors.
Finally, it's time to add a splash of acidity, either through borscht or freshly squeezed lemon juice. This will give the soup that note of freshness and will enhance the flavor. Don't forget to sprinkle finely chopped fresh parsley on top, which will add a touch of color and a boost of vitamins.
This savory soup can be served both hot and cold, making it an excellent choice in any season. Full of vitamins and flavors, it is a healthy and comforting dish. Enjoy your meal!
