Cabbage Soup (Kelkaposztaleves)

 Ingredients: 1 carrot, 1 parsley root, 1 head of curly cabbage (about 800g to 1kg), 3-4 cloves of garlic, 1 teaspoon of marjoram, 1/2 teaspoon of ground cumin, salt to taste, 3 medium-sized potatoes, 100 ml of oil, 1 tablespoon of flour, 1 teaspoon of sweet paprika, 2-3 sausages, 200 ml of sweet milk.

Savoy cabbage, a versatile and nutritious ingredient, is the star of this delicious soup recipe. We start by removing the outer leaves of the cabbage, ensuring that we keep only the healthy parts. Then, we chop it finely, obtaining thin and even strips that will blend perfectly with the other vegetables. The carrot and parsley, also essential for flavor, must be peeled and diced into equal-sized cubes for even cooking. The potatoes, after being peeled and washed, will also be diced, leaving them in cold water to prevent oxidation until use.

In a pan, we will heat 50 ml of oil, where we will add the chopped carrot and parsley. We sauté these vegetables over medium heat, stirring frequently, until they become slightly soft and their flavors are released. Then, we add the finely chopped savoy cabbage and continue to sauté everything together until the cabbage softens. Now, we can add about 3 liters of water, enough to turn the ingredients into a hearty soup. At this point, it is essential to add salt to taste, to enhance the flavors.

Garlic, with its unmistakable aroma, will be sliced thinly or even crushed, depending on preference. It will be added to the soup along with a teaspoon of marjoram and half a teaspoon of ground cumin, ingredients that will provide a rich and complex flavor. We let the soup simmer until the cabbage becomes soft, at which point we will also add the diced potatoes. They will cook together with the other vegetables, absorbing the delicious flavors.

While the potatoes are cooking, we will prepare a roux that will enrich the soup's texture. We heat 100 ml of oil in a pot, adding a tablespoon of flour. We stir constantly until the mixture becomes homogeneous and slightly golden, then remove from heat and add a teaspoon of sweet paprika, which will add a touch of color and extra flavor. This roux will be incorporated into the soup once the potatoes are ready.

The slices of sausage, which will add a note of protein and flavor, will now be added to the soup, allowing everything to boil for 1-2 minutes. Towards the end, we add 200 ml of sweet milk, which will make the soup even creamier. We let it come to a boil a few times, adjust the salt, and after all the ingredients have combined harmoniously, the soup is ready to be served. Enjoy this comforting delicacy!
