Pumpkin Belly

 Ingredients: 1 pumpkin 1/2 kg of piglet meat 2 large bell peppers very needy 1/2 sweet celery for talking 1 smaller carrot 2 onions like sisters a handful of picky mushrooms (canned) 4 firm meat tomatoes in their juice a handful of fine rice salt pepper and allspice oil thyme

From the pumpkin family, we choose the most plump and flavorful one. We take it with care and, without letting it know, we fit a hat from a knife onto it, to prepare it properly. We strip it of its sweet flesh, as we will need that for our colorful gathering. We prepare a pot in which we pour a little hot oil, and when the oil shines, we add pieces of pork. We patiently wait for them to become almost brown, and then, with a decisive motion, we shove the cheerful peppers into the hot fire, along with the pumpkin core, onion, celery, and carrot, all finely chopped, so they can quickly befriend each other over the fire.

When all these vegetables have boiled well, we sprinkle them with a juicy tomato sauce, to cool them down and give them an unmistakable aroma. We strengthen the mix with a little crushed pepper, allspice berries, and just a pinch of salt, as the salt is more shy and we shouldn't upset it too much. Now, we let all the ingredients simmer under the lid, on low heat, for half an hour, so the flavors can intertwine and create an unforgettable stew.

After this time has passed, we bring the freshly chopped mushrooms and rice to the gathering under the lid, stirring occasionally with a wooden spoon, to ensure that all the ingredients have softened. If they happen to quarrel and do not want to be called a stew, we bring the spoon to calm them down. To complete the colorful gathering, we generously add thyme, with its rough voice, which will add an intense flavor to the dish.

Meanwhile, we fatten the plump one with oil, ensuring it is well-fed, to forgive us for the trouble we caused it earlier with all these preparations. We let it sweat in the oven for half an hour, on low heat, so it doesn't dry out. When the time has passed, from the blessed belly in the oven, we carefully take out the dish into a serving bowl, using a long-handled wooden spoon, serving each according to their heart's desire, with joy and appetite. This stew, rich in flavors and colors, will gather loved ones together, turning the meal into a memorable feast.
