Baked chicken thighs
Ingredients: 3-4 chicken thighs, 10 potatoes, 3 onions, 3-4 bell peppers, 2 carrots, a parsley root, oil, tomato juice (optional).
To prepare a delicious baked dish, the beginning of the recipe involves preparing the vegetables. Cut about 10 large potatoes into chunks, which will add texture and a delicious taste to the dish. Choose medium-sized potatoes to ensure even cooking. Continue with 2 carrots, which will provide a hint of sweetness, and a parsley root, which will enhance the flavor. Don't forget 3 onions, which, besides their savory taste, will add moisture. Choose 3-4 bell peppers, but you can experiment with any vegetables you prefer, from zucchini or eggplant to bell peppers, depending on the season and your preferences.
After you have cut all the vegetables, place them in a large baking dish, which will allow for even heat distribution. Generously season with salt and pepper, mixing well to ensure that each piece of vegetable is coated with the spices. Add 1/2 cup of water to the dish, which will help create steam during baking, and a few tablespoons of olive oil to add a rich flavor and prevent the vegetables from sticking. If you wish, you can also add a little tomato juice, which will provide a hint of acidity and a pleasant color to the dish.
The next step is to add pieces of meat on top of the vegetables. Chicken is an excellent choice due to its tenderness and delicate flavor, but you can also opt for pork or beef, depending on your preferences. Make sure the pieces of meat are evenly distributed over the vegetables so that they cook evenly.
Once you have assembled everything in the dish, cover it with aluminum foil to retain moisture and allow the ingredients to cook in steam. Preheat the oven to 180 degrees Celsius and place the dish in the oven. Let it cook for 45-50 minutes, during which the flavors will combine and the vegetables will become tender.
After this time, remove the dish from the oven and take off the aluminum foil. This will allow the meat to brown nicely. Increase the oven temperature to 200 degrees Celsius and let the dish stay in the oven for another 20-25 minutes. You will notice how the meat becomes golden and crispy, while the vegetables caramelize, providing a delicious contrast.
