Mini Apple Strudel with Phyllo Dough
Ingredients: 10 sheets of pastry (I used Bella pastry) 6 apples (I used Golden) 100-150 g walnut kernels 3 tablespoons of granulated sugar for syrup 4 tablespoons of granulated sugar for the apple filling raisins (optional) ground cinnamon oil for greasing the sheets powdered sugar for decoration
Apples are a versatile ingredient that, when turned into filling, can bring a touch of flavor and good mood to any dish. We start this tasty recipe by grating the apples with a small grater. It is important to choose fresh apples to achieve an intense aroma and pleasant taste. After we finish grating the apples, we squeeze them well to obtain the juice. This apple juice, which should be around 250 ml, is poured into a saucepan, we add 3 tablespoons of sugar, and put it on low heat to boil. It is essential to be careful, as this mixture will form foam and could overflow, so we do not step away from the stove.
Once the syrup reduces by half and becomes thicker, we take care of the grated apples. We mix the squeezed apples with the 4 tablespoons of granulated sugar, a teaspoon of cinnamon, and the walnut kernel, which we have crushed or ground. The walnut kernel adds a crunchy texture and a delicious flavor, and I personally prefer the crushed version, which retains all the essence of the nuts.
Now we prepare to fill the pastry sheets. We divide the apple filling into portions of at least one tablespoon for each sheet. We start with the first sheet, which we brush with oil using a kitchen brush. We fold it in half, and if we want, we can cut where we folded, or leave it whole. On the short side of the sheet, we place a portion of the apple filling, after which we brush the rest of the sheet with oil and roll it carefully. In the end, we fold the long sides inward, like stuffed cabbage, and form a roll that we place in a baking tray lined with parchment paper. We proceed the same way with all the sheets and filling until we finish the ingredients.
When the rolls are ready, we place them in the preheated oven at 180-190 °C. We bake until they become golden and appetizing. It is time to take the tray out of the oven and brush the hot rolls with the syrup obtained earlier from the apple juice and sugar. It is recommended to repeat this brushing process several times so that the syrup penetrates well into the sheets. If we obtained the same amount of syrup as in the recipe, we can even pour the remaining syrup over the rolls after brushing them 3-4 times. We let everything cool down, allowing the flavors to develop, creating a delicious and comforting snack. These apple rolls are ideal to be enjoyed with a cup of tea or coffee, bringing a touch of joy in every bite.
