Simple Pretzels or with Sesame
Ingredients: 1 kg white flour, 1 teaspoon salt, 1 teaspoon sugar, 40 g fresh yeast, water as needed to make a dough like for bread, a pinch of baking soda
To prepare some delicious pretzels, the first step is to activate the yeast. In a small bowl, we add fresh yeast along with sugar and warm water. It is essential that the water is warm but not hot, so as not to destroy the yeast. We let the yeast mixture sit for about 10 minutes until a foam forms on the surface, a sign that the yeast is active. Meanwhile, in a large bowl, we add the flour and salt, mixing well to ensure an even distribution of the ingredients. After the yeast has fermented, we pour it over the flour mixture, starting to mix with a spatula or by hand, adding a little warm water until we obtain a homogeneous, elastic, and slightly sticky dough, similar to bread dough.
Once the dough is ready, we cover it with a clean towel and let it rise in a warm place for about 30 minutes. This rising process is essential for obtaining fluffy and well-aerated pretzels. After the dough has risen, we transfer it to a floured surface and divide it into equal pieces, which we roll into long strips. We form the pretzels by twisting these strips and joining the ends to create the specific shape.
To give them a crispy texture, we prepare a solution with warm water and baking soda. In a plate, we add warm water (almost hot) and a small amount of baking soda, about what you can take with three fingers. We dip each pretzel in this solution for about 30 seconds, making sure to turn them to coat evenly. After removing them, we place them on a baking sheet lined with parchment paper. If we want to add a crunchy note, we can sprinkle sesame seeds over the pretzels dipped in water, ensuring they stick well.
We bake the pretzels in a preheated oven at a moderate temperature, about 180°C, for 20-25 minutes or until they become golden and crispy. The aroma that will spread throughout the house will be irresistible. Once they are ready, we let them cool slightly on a rack, then serve them warm, alongside a mustard dip or melted cheese for a perfect appetizer. These pretzels are ideal for any occasion, whether it's a party, a gathering with friends, or simply to be enjoyed in the comfort of your own home.
