Ingredients: -7 - 8 eggs -1 kg thick yogurt -250 - 300 g brown sugar -1 pack of pastry sheets -2-3 sachets of vanilla sugar -grated zest from 1/2 lemon -250 g raisins -rum or rum essence -powdered sugar for decoration, optional
To prepare a delicious cake with phyllo pastry and yogurt filling with raisins, we start by preparing the necessary ingredients and utensils. The first step is to soak the raisins in rum or water with rum essence, leaving them for about an hour to absorb the flavors, which will give them an intense taste and a soft texture.
Meanwhile, we take care of mixing the ingredients. In a large bowl, we beat the egg yolks with half of the brown sugar until the mixture becomes frothy, changes color, and the sugar completely dissolves. In another bowl, we beat the egg whites with the other half of the brown sugar until we get a firm, shiny foam that will incorporate the necessary air to make the cake fluffy.
Separately, in another container, we mix the yogurt with vanilla sugar and grated lemon zest, which will add a fresh note to the preparation. After obtaining a homogeneous mixture, we incorporate the beaten egg yolks, and then gradually add the beaten egg whites in two batches, mixing with a spatula through a gentle folding motion from bottom to top, to maintain the air in the composition.
We prepare the baking tray by lining it with parchment paper. We place 2-3 sheets of phyllo pastry, overlapping them in the tray, ensuring that the edges are well covered. We pour 2-3 ladles of the yogurt filling, leveling it so that it forms an even layer about a finger thick. After sprinkling the well-drained raisins, we continue with another 2-3 sheets of phyllo pastry to cover the filling.
We repeat this process, alternating layers of filling with layers of phyllo pastry until we finish the ingredients. The last layer should be filling, which we generously sprinkle with raisins to ensure that each piece will be full of flavor and taste. We preheat the oven to 170-180 degrees Celsius and place the tray inside, letting the cake bake for 40-50 minutes, or until the surface becomes firm and beautifully browned.
After baking, we let the cake cool on a rack to maintain its texture. If desired, we can dust the cake with powdered sugar, adding a touch of elegance. We slice the cake and serve it eagerly, savoring each delicious piece full of flavor and texture. This recipe is perfect for any occasion, whether it's a family meal or a party with friends.
