Apple Strudel
We knead the ingredients by hand or with the help of a food processor until we obtain a smooth and elastic dough. This is the first essential step to achieve the desired texture of the dough, and patience in this process will make a difference. We prepare the butter cream by homogenizing the butter with the flour, ensuring that both ingredients combine perfectly, resulting in a fine paste that will add a rich flavor to our dish.
We divide the dough into two equal parts so that we can work with each sheet separately. We roll out the first sheet, which should be square, having the right thickness, not too thin, to support the rich filling. After achieving the desired size, we evenly spread the sheet with the previously prepared butter cream. We make two cuts on each side of the sheet, but we take care not to cut all the way through, so we can easily fold the dough.
We start folding the dough by overlapping the opposite corners, creating a "package" that will hold the delicious filling. We place this package with the folded side down, wrap it in plastic wrap, and refrigerate it for 30 minutes. This step is crucial to allow the dough to cool and maintain its shape. We do the same with the second sheet.
After 30 minutes have passed, we take the dough out of the fridge. We place each sheet on a lightly oiled work surface, with the folded side up, and roll out another sheet, repeating the previous steps. After finishing, we refrigerate the dough again for 30 minutes. If the dough stays longer in the fridge, it is not a problem; on the contrary, it will become even easier to handle.
In the meantime, we take care of the filling. The apples are carefully peeled and diced. We sauté them in a pan with 4 tablespoons of sugar until they become soft, but we do not puree them. We add the starch to bind the mixture, and at the end, we sprinkle cinnamon, which will provide a fragrant and warm taste. We let the filling cool.
After rolling out the sheets on the oiled surface, we portion the dough into larger or smaller squares, which we fill with the sautéed apples. We place the strudels on a baking tray lined with parchment paper, ensuring they are well arranged. We place them in a preheated oven at 190 degrees Celsius and bake for 20-25 minutes or until they become beautifully golden and appetizing. It's time to enjoy the fruits of our labor!
