Peach Jam
Ingredients: 3 kg of firmer peaches, 1 kg of sugar, juice from 5-6 lemons (or essence)
To prepare a delicious peach jam, start by carefully washing the peaches, making sure they are clean and free of impurities. Then, using a sharp knife, peel each peach carefully, keeping in mind that the skin can be quite thin and fragile. Once all the peaches are peeled, slice them thinly to facilitate juice extraction and intensify the flavors during the cooking process.
In a saucepan or large pot, place the peach slices without adding water, as these fruits have a high water content and will release enough liquid during cooking. Set the pot over low heat and stir occasionally, being careful not to let it stick to the bottom. You will notice how the peaches begin to break down and release their juice, and the mixture becomes more uniform. Continue stirring until the liquid has significantly reduced and the peaches have a soft consistency.
Then, add the sugar and lemon juice, mixing them well to combine with the fruit. The lemon not only adds a note of freshness but also helps preserve the color and flavors. Allow the mixture to boil for 15-20 minutes, encouraging the flavors to develop and intensify. Once the time is up, remove the jam from the heat and let it cool, covered with a lid, until the next day.
The next day, bring the jam back to a boil for another 15 minutes. This repeated boiling process helps achieve a more consistent texture and improve the taste. Once finished, let the jam cool again. On the third day, repeat the boiling process for another 5-10 minutes, ensuring the jam is well thickened.
To preserve the jam, add a crushed aspirin tablet or salicylate, mixing well to disperse evenly. Then, transfer the warm jam into sterilized jars, filling them to the brim but leaving a little space at the top. Put the lids on and place the jars upside down on a flat surface to create a vacuum that will help preserve the jam. Leave them like this until they cool completely, after which you can store them in your pantry.
Peach jam can be enjoyed in various ways: spread on a slice of toasted bread with butter, added over semolina with milk or rice cooked in milk, or even used as a filling for delicious fruit tarts. Enjoy the taste of summer and the intense aroma of peaches in every jar!
