Pumpkin Smoothie with Caramel Sauce

Ingredients: For the caramel: 50 g unrefined/raw sugar 30 g butter (80-82%) 40 g cream (between 20-30%) For the smoothie: 200 g pumpkin puree 250 ml whole milk 300 g Greek yogurt 1/4 stick of cinnamon 3 cloves 1 allspice 1 star anise petal 1/4 teaspoon ground ginger 3 tablespoons maple syrup, preferably grade A (in this case, you can also use honey) 1 teaspoon vanilla extract 40 ml freshly squeezed orange juice (wash the orange before squeezing)

To prepare a delicious flavored caramel sauce recipe, start by using a medium-sized saucepan, in which you will add the sugar, spreading it evenly across the bottom. Place the saucepan over low heat, being careful not to raise the temperature too quickly, allowing the sugar to melt gradually. It is important not to stir the sugar with utensils, but to gently swirl the saucepan from time to time to help dissolve the sugar crystals evenly. When you notice that the sugar is completely melted and has taken on a golden color, remove the saucepan from the heat.

At this point, add the diced butter, being cautious of the hot steam that will arise, as the melting process can cause large bubbles. Use a spatula to mix the butter until it is fully integrated into the caramel. Once the butter is incorporated, add the cream, continuing to stir with the spatula until the mixture becomes smooth and creamy. Once all the ingredients are well mixed, set the mixture aside to cool.

Meanwhile, prepare the spices: take the cloves, star anise, allspice, and cinnamon and grind them finely using a mortar or blender. These flavors will add a deep and complex taste to your sauce. Once the spices are ground, add them to the blender along with the rest of the ingredients, except for the orange juice. Pour the cooled caramel over them and start the blender, pulsing until all the ingredients are well incorporated and the mixture becomes smooth.

After you have obtained a fine sauce, cover the blender and let the preparation cool for at least an hour, so that the flavors can combine and intensify. When you are ready to serve the sauce, add the orange juice and mix well to achieve a balanced consistency and taste. This flavored caramel sauce can be used to accompany desserts such as cakes, ice creams, or fresh fruits. Adjust the amount of spices and maple syrup according to personal preferences to achieve a customized taste that delights the palate.
