Ingredients: 2 large servings: 200 g of pasta (without eggs, long or short as you prefer) 1 large bunch of fresh green parsley, grated zest and juice from 1 large lemon (or one and a half smaller lemons) 2 tablespoons of oil * salt pepper (optional) Grated Pecorino Romano (or any sheep cheese)

In the meantime, we focus on the sauce that will give a vibrant taste to the dish. We finely chop a fresh bunch of parsley. Its aroma will add a burst of freshness to the plate. In a small bowl, we whisk a generous amount of extra virgin olive oil with a fork. It is essential to use a high-quality oil, as it will influence the final taste.
