Pasta (bowties) with Peas and Pecorino Cheese

 Ingredients: For 2 servings: 300 g of green beans* 160 g of bowtie pasta 2 tablespoons of diced bacon (optional) pecorino cheese

To prepare a delicious recipe for pasta with fresh green peas and ham, the first step is to take care of the fresh peas. Start by opening the pods, being careful to clean them carefully. Each pod contains juicy peas, and removing them is easy. Don't forget that, depending on personal preferences, you can choose to peel the peas or not. At this time of year, fresh peas are incredibly tasty, and if you have no digestive issues, you can even eat them raw, savoring their natural flavor. Personally, I chose to peel each pea, but it is an option that is not mandatory.

Next, put a large pot of water to boil, adding a generous amount of salt, which will help enhance the flavors of the pasta. When the water is boiling, add the pasta and let it cook according to the package instructions. About five minutes before turning off the heat, add the peas to the pot so that they cook together with the pasta. This will allow the peas to retain their crunchy texture but become cooked enough to blend perfectly into the dish.

Meanwhile, prepare a pan in which you will sauté the ham. Cut the ham into small cubes and add it to the heated pan, letting it sauté until the fat melts and becomes golden. The aroma of the fried ham will give a savory flavor to the dish, and the combination with the green peas will create a pleasant contrast of textures.

Once the pasta is cooked and the peas are ready, drain them in a colander. Then, add the pasta and peas to the pan with the ham and mix well, allowing the ingredients to combine for a few minutes over low heat. If you want to add extra flavor, you can drizzle the dish with a little extra virgin olive oil, which will add a touch of finesse and enrich the aroma.

To serve, transfer the pasta with peas and ham onto plates and, for a delicious finish, grate some pecorino cheese on top.
