Apple Tart with Chocolate and Caramel Sauce with Cream

To prepare a delicious apple and chocolate tart, we start by gathering all the necessary ingredients and preparing a clean workspace. In a large bowl, mix 300 g of flour with 150 g of cold butter, cut into cubes. Use your fingers to combine the two ingredients until you achieve a texture similar to sand. This is the base for our dough. Add 100 g of sugar, a pinch of salt, and 1-2 tablespoons of cold water. Knead the dough until it becomes elastic and homogeneous. Once finished, wrap it in plastic wrap and refrigerate for an hour to firm up and develop flavors.

Meanwhile, prepare the apple filling. Peel the sour apples and remove the seeds, cutting them into cubes and drizzling with lemon juice to prevent oxidation. In a pan, add the apples and cook for 10 minutes over medium heat, along with 2 tablespoons of water and the grated zest of one lemon. Stir constantly to obtain a thicker puree while keeping the apple pieces whole. Now, peel the other apples and cut them into 6 pieces, again drizzling with juice from the other lemon.

In another pot, prepare a yellow-brown caramel by melting the remaining butter and sugar over moderate heat. Once the sugar has melted and turned into a beautiful caramel, add the golden apple slices and stir to coat them evenly with the caramel. After a few minutes, remove them and set aside. In a bowl, melt the broken chocolate pieces in a double boiler, adding the butter. Stir until you achieve a homogeneous mixture, then let it cool slightly.

After the dough has chilled, line a 25 cm tart pan, greased with butter, with the dough sheet. Pour the cooled sour apple puree onto the bottom of the pan, followed by the melted chocolate. Level the surface for an even appearance. Arrange the caramelized apple slices on top to create an attractive pattern.

In a separate bowl, combine the cream with lightly beaten eggs, using the pot in which you prepared the caramel. Over low heat, stir continuously, without allowing it to boil, until the remaining caramel dissolves completely. Pour this mixture evenly over the caramelized apples, and the tart is ready for the oven. Preheat the oven to the appropriate temperature and bake the tart until firm and nicely browned on the surface.

After baking, let the tart cool slightly before serving. It is optional to dust it with powdered sugar and sprinkle grated chocolate on top for an extra touch of elegance and flavor. This tart will not only bring delicious flavors but will also become an unforgettable dessert at any meal!
