Bread with Cream Cheese
Ingredients: Filling: -450 g cream cheese with herbs (like processed cheese) -200 g cottage cheese Dough: -150 ml oil -200 ml warm milk -100 ml lukewarm water -1 tablespoon sugar -1 teaspoon salt -700 g flour -1 packet of dry yeast (7 g)/21 g fresh yeast Others: -egg yolk mixed with a little milk for brushing -sesame seeds/poppy seeds/cumin etc. (optional)
Filling: Start by thoroughly homogenizing the filling ingredients, ensuring that all flavors are perfectly integrated. Once the filling is ready, set it aside to rest and concentrate its flavors.
Dough: The process of preparing the dough begins with using a bread machine, where you will add the ingredients in the correct order. Start by pouring in the oil, followed by the warm milk and water in which you have dissolved the sugar and salt. It is essential that these liquids are lukewarm to activate the yeast properly. Then, sift the flour and add it to the bowl, and finally, incorporate the dry yeast. If you opt for fresh yeast, rub it with the sugar from the recipe and dissolve it in a little warm milk from the total amount. Set the dough program on the machine and let it do its job.
If you do not have a bread machine, do not worry. Start by rubbing the yeast with the sugar, then dissolve it with half of the warm milk. Add a few tablespoons of flour and let the mixture rise, covered, for about 10-15 minutes. After it has risen, pour the mixture over the remaining ingredients and knead a smooth and non-sticky dough. Place the dough in a bowl greased with a little oil, cover it well, and let it rise in a warm place until it doubles in volume.
Once the dough has risen, take it out onto a work surface and divide it into 3 equal parts. Roll each part into a rectangular sheet, then evenly spread 1/3 of the previously prepared filling. Roll each sheet into a log shape along the long side, then twist the log a few times for a nice appearance. Transfer the first log to a baking tray lined with parchment paper, shaping it into a snail, starting from the center of the tray and continuing with the other logs, being careful not to leave empty spaces between them.
Let it rise for about 30 minutes in a warm place. Before baking the bread, brush it with a lightly beaten egg yolk mixed with a little warm milk and, if desired, sprinkle your favorite seeds on top. Preheat the oven to 190-200 degrees Celsius and bake the bread for about 25 minutes or until it becomes golden and browned. After baking, remove the bread from the oven and let it cool on a rack. This way, you will achieve a delicious bread with a perfect texture and a flavorful filling that will delight everyone.
