Apple and Whipped Cream Cake
Ingredients: 1 kg apples. For the dough: 6 eggs, 6 tablespoons sugar, 6 tablespoons flour, 4 tablespoons oil, vanilla essence, 1 packet baking powder, 1 teaspoon vinegar. For the syrup: 3 cups semi-dry white wine, 1 cup water, 1 cup sugar, vanilla sugar, 2 cinnamon sticks, 1 teaspoon cinnamon powder. For the whipped cream: 1 kg sour cream 25% fat, 1-2 packets vanilla flavored sugar. For decoration: fresh or frozen fruits, assorted colors.
Cleaning the apples is the first important step in preparing this delicious dessert. Carefully remove the skin and seeds, then slice the apples into pieces about 0.5 cm thick. These slices will absorb the flavors from the syrup and add a pleasant texture to the cake. In a bowl, mix the apple slices with vanilla sugar and cinnamon powder to coat them in a sweet and spicy aroma. In a saucepan, prepare a syrup from wine, water, sugar, and cinnamon sticks. Let it boil, and when it reaches the boiling point, add the apples and boil them for five minutes. This step is essential to soften the fruits and enrich them with the syrup's flavors. Once finished, let the mixture cool, then drain the apples in a colander, collecting the syrup to use for soaking the cake base.
Meanwhile, it’s time to focus on the cake base. Separating the egg whites from the yolks is crucial for achieving a fluffy texture. Beat the egg whites until stiff with sugar until you get a glossy mixture. In another bowl, mix the yolks with vanilla and oil, then extinguish the baking powder with a teaspoon of vinegar and incorporate it into the yolk mixture. Then, carefully add the beaten egg whites into the yolk mixture, followed by the sifted flour. Pour the batter into a 24 cm round pan, ungreased but lined with baking paper at the bottom. Bake the base for 40 minutes in a preheated oven at low heat, then let it cool in the pan.
As the base cools, prepare the whipped cream. Put the cold cream in a tall bowl and beat with a mixer at low speed, then increase the speed and continue beating until the mixture becomes creamy and leaves traces on the beaters. Add the sugar and beat for a few more minutes, then keep the whipped cream in the refrigerator until assembling the cake.
To assemble the cake, cut the cold base into three horizontal slices. Place the first layer on a platter and soak it with a third of the collected syrup. Arrange the apple slices in concentric circles, covering the entire surface, and spread 4-5 tablespoons of whipped cream on top. Repeat the process with the second layer, then place the third one. Generously coat the cake with the remaining whipped cream and decorate it with slices of kiwi, orange, strawberries, raspberries, or blackberries for a colorful and appetizing look. Let the cake chill in the refrigerator for a few hours for the flavors to blend and intensify. This is a recipe that will not only delight the taste buds but also bring a touch of joy to any occasion!
