Coconut and Chocolate Cake
Ingredients: 3 eggs, 100 g of dark/regular chocolate, 100 g of grated desiccated coconut, 100 g of flour, 80 ml of sunflower oil, 100 g of sugar, ¾ cup of soy or regular milk, a little cinnamon, ½ baking powder, 1 packet of vanilla, a pinch of salt.
We start with preparing this delicious dessert that will delight all the senses. The first step is to melt the chocolate, an essential ingredient in this recipe, along with the milk, using the bain-marie method. So, put a pot of water to boil, then place a bowl on top, making sure that the bottom of the bowl does not touch the water. Add the chopped chocolate and milk, stirring constantly until the chocolate is completely melted and a homogeneous mixture forms. Once the chocolate has melted, let it cool slightly.
Meanwhile, prepare the other ingredients. In another bowl, beat the egg yolks with the sugar using a mixer until the mixture becomes creamy and light in color, having a texture similar to a foam. This is the stage where the sugar will dissolve, and the eggs will gain a fluffy consistency. After you have obtained this foam, add the melted and cooled chocolate, oil, flour, coconut, vanilla, cinnamon, and baking powder. Mix all these ingredients with the mixer until you achieve a uniform composition.
In a separate bowl, beat the egg whites with a pinch of salt. This is an important step, as the salt helps the egg whites become more stable, approaching the consistency of a meringue. Beat the egg whites until stiff peaks form, but do not overdo it, so they do not become too dry. Now, very carefully, fold the egg whites into the chocolate mixture, stirring slowly with a spatula or spoon, from the bottom up. This technique will allow the air trapped in the egg whites to remain in the mixture, giving the cake a fluffy and light texture.
Once the ingredients are well combined, prepare a baking tray. I recommend using a round shape with a diameter of 24-26 cm, but you can also opt for a medium-sized tray, depending on your preferences. Line the tray with baking paper to prevent the cake from sticking. Carefully pour the mixture into the tray, making sure it is evenly distributed.
Preheat the oven to a temperature of about 160-180 °C. Once the oven is well heated, place the tray inside and bake the cake for 30-40 minutes, or until a toothpick inserted in the middle comes out clean. When the cake is ready, remove it from the oven and let it cool in the tray for a few minutes, then transfer it to a rack to cool completely.
