Imperial Soup with Royal Dumplings

This soup is truly special, a dish that combines grandpa and grandma, childhood memories, and ancestral culinary traditions. The recipe I will share is a heartfelt one, kept sacred in grandma's notebook, and it will help you achieve a clear soup with a rich aroma and a perfect taste. The first step is to have all the ingredients ready and to ensure you use fresh products, as they are essential to the final result.

We start by putting cold water in a pot with a lid. We add a whole white onion, with its skin, a few cloves of garlic, a pepper core, salt, and peppercorns. Everything will be flavored during boiling. While the water reaches boiling point, we clean the vegetables: carrots, parsley, parsnip, and celery, which we cut into suitable pieces. These vegetables will add extra flavor to our soup.

Once the water has started to boil, we remove the onion, garlic, and pepper core from the pot, leaving only the flavored water. We add the cleaned and chopped vegetables, letting them boil over medium heat for about 20 minutes. It is important that they remain firm, so cutting them lengthwise will help us achieve the desired consistency. In the meantime, we prepare the chicken: we fry the drumsticks in a pan on all sides, just enough to seal them. This will prevent the juices from the meat from leaking out, and we quickly wash the breast and wings, preparing them to be added later.

When the vegetables are almost ready, we add the fried drumsticks and royal dumplings, which we let boil together for 5 minutes. Then, we introduce the chicken breasts and wings, turn off the heat, and cover the pot with a lid. It is time to let the soup cool down slightly. This process will allow the chicken breasts to cook in the heat of the soup, keeping them tender and juicy, while the drumsticks will not soak up water, maintaining their texture.

After the soup has cooled, you will be amazed to see that it is clear, without foam and without deposits at the bottom of the pot, having a pleasant yellow hue due to the onion skin. The dumplings will swell, and the drumsticks will stand proudly in the soup. The aroma will fill the entire kitchen, and the taste will be unforgettable.
