Garlic Soup from Transylvania
Ingredients: 5 cloves of garlic, 400 g turkey meat (but it can be pork or chicken), 1/2 lemon, vinegar, salt, 1 carrot, 1 parsley, 300 g sour cream, 2 eggs, 3-4 tablespoons of lard (or oil), cheese - optional
We begin the culinary adventure by preparing the basic ingredients for a delicious soup. The first step is to cut the meat into thin strips, ensuring they are uniform for even cooking. This will help achieve a tender and juicy texture. The carrot and parsley, after being peeled and thoroughly washed, are sliced thinly to blend perfectly into the soup. The garlic, an ingredient that adds extra flavor, is peeled and finely sliced. Don't forget the lemon zest, which will bring a touch of freshness and a refined taste.
Now that we have all the ingredients ready, we get to cooking. In a large pot, we heat the lard. When it is hot enough, we add the strips of meat and sauté them, stirring constantly, until they turn white. This is the moment when the flavors begin to reveal themselves. After about 3-4 minutes, we add the slices of carrot, parsley, and garlic, continuing to sauté everything for another 2-3 minutes until the vegetables release their aroma.
Next comes the essential step: we extinguish the preparation with about 2 liters of cold water, ensuring that all the ingredients are well covered. We let it simmer on low heat, being careful to check from time to time, until the meat becomes tender and juicy. It is important to season with salt to taste and add a little vinegar, adjusting the amount according to everyone's preferences. The grated lemon zest is now added to the pot, providing that fresh note that will make the soup truly special. We let it boil a few times, so the flavors blend perfectly.
In the meantime, we prepare the roux from the two egg yolks, which we mix with sour cream. It is essential to add a little of the hot soup to the mixture to temper it. This step will prevent the eggs from curdling and will ensure a creamy consistency. Once the roux is warm, we carefully pour it into the pot with the hot soup and let it come to a final boil.
We serve the hot soup, sprinkled with grated cheese on top for an extra touch of flavor. The flavors blend perfectly, and the final dish is a true delight for the senses. Enjoy your meal!
